Sweet Potato Biscuit Bites


1 ¾ cups whole wheat flour

¾ tsp xanthum gum

¼ cup corn starch

½ tsp baking soda

8 packets truvia

1 tsp salt

8 tbsp unsalted butter roughly chopped and chilled

¾ cup pureed baked sweet potatoes about 2 medium sweet potatoes)

1/3 reduced fat sour cream

¼ cup lowfat milk

Preheat oven to 400F

Line a rimmed baking sheet with unbleached parchment paper

In a large bowl whisk together all the dry ingredients

Add in chopped butter with the dry ingredients and toss to coat

In a separate bowl, place sweet potatoes, sour cream and milk and combine well

Create a well in the center of the flour mixture and pour the sweet potatoe mixture into the center. Mix with a spoon until both mixtures come together.

Turn the dough out onto floured surface. Flatten and roll a few times. Pull apart pieces and roll into 1in balls and place on baking sheet. I sprayed the parchment paper with nonstick spray just to be safe 😊 Bake in oven approximately 15-20mins. Stick the center with a toothpick to make sure the center is cooked. Let cool then enjoy.
